Featuring a full-height hollow grind and a stunning polish, the Cognet "Le Thiers" is in many ways like a knife-shaped straight razor! Don't let its pretty face fool you, though--this knife is made for work! The slipjoint mechanism is built with a very lively and robust spring and the blade tang is outfitted with a half-stop for additional safety. The fit of the backspring is very good, but not "watertight" which we find aids in the shedding of dirt and debris during opening and closing. The slim and durable handle is formed of solid stainless steel embossed with the world famous Douk-Douk emblem and is affixed with hand-set flush rivets. In spite of its dressy appearance this knife is a fine example of an up-scale working "peasant knife" in the true lineage of the Douk-Douks that Cognet is most famous for.

The manufacture of these knives is under strict oversight by the Brotherhood of Thiers Cutlers and bears their mark on the blade.

If selecting the Special Grade Option we will give the edge an extra polishing and stropping for scalpel-like performance.

Note: These knives are not intended to be forcefully "snapped" closed as the spring is strong and lively enough that the blade may lightly strike it if allowed to do so. We advise guiding the blade into the shut position, as is intended with this model.
